Salsa Fresca Chicken Bake is a great keto dinner recipe to make with your family. It’s a simple way to use up leftover chicken and salsa in a delicious, flavorful dish that everyone will love. We all know that salsa is a great way to spice up your food, but what if you want to make it into a delicious chicken bake? This recipe and video will give you an easy step-by-step guide on how to do just that.
2 lbs Skinless & Boneless Chicken Breast
1/2 tsp Salt, divided
1/4 tsp Black Pepper
1/4 tsp Garlic Powder
1/2 fresh chopped Cilantro
1/2 lime, juiced
1/4 tsp Cumin
1 cups shredded Mozzarella or cheese of choice
1/4 tsp Red Chili Pepper Flakes
2 cups diced Grape/Roma Tomates
1/2 cup chopped Onion
1/2 cup chopped Jalapeño
Add additional veggies such as cauliflower, red peppers, olives, corn, broccoli, etc if you prefer more!
1- Preheat the oven to 400˚F (200ºC). Chop chicken breasts into small pieces. In a salad bowl, combine tomato, onion, jalapeño, cilantro and lime juice with 1/4 teaspoon salt.
2- Arrange the chicken pieces flat in a large baking dish and season evenly with cumin, garlic, red chili pepper flakes, salt, and pepper.
3- Give a quick stir to combine chicken evenly with seasoning. Cover chicken pieces with the diced tomatoes, onion, and jalapeño, then top with shredded mozzarella.
4- Bake the salsa Fresca chicken on the middle rack for 25 – 30 minutes or until chicken is cooked through and no longer pink (internal temperature of 165˚F – 74ºC).
5- Garnish the salsa Fresca chicken bake with more chopped cilantro, and serve hot with your favorite side dish – like rice, bulgur, cauliflower rice, pasta, tortillas… Enjoy!
